While we may immediately think jack-o-lantern when we see pumpkins they are also edible and a great storage crop 

Storage 

Once cured pumpkins can last several months when kept in a cool dry place like a panty or cold cellar. However, if the skin gets pierced or damaged you will want to make plans to eat it or perserve it within a few days.

Cooking Tips 

Pumpkin is great in my ways other then just in a pie, we like it roasted, baked, pureed and added to potatoes or sweet potato, or added to soups and sautees. And don't forget about their seeds, pumpkin seeds have the highest amount of zinc when compared to all the other seeds and nuts, so roast them up for a tasty snack.
